Weigh Ahead Christmas Cake
I know most of us don’t want to be thinking of Christmas just now, but some things are worth planning ahead and one of them is Christmas Cake.
A Christmas Cake made with fruit soaked for weeks in fresh juice and whisky tastes so much better than a last minute thrown together cake.
Weigh Ahead can make this easier for you. We are taking orders for jars of dried fruit already mixed with fresh organic fruit juice and alcohol. All you need to do is put it in your cupboard and let it soak until you are ready to bake your cake.
And as well as helping to reduce plastic packaging you will have a Kilner jar ready to use for something else!
Orders for these jars cost £xx and can be taken now until the end of September for collection from the shop from the beginning of October.
And to then make things even easier we will be preparing packs with the rest of the ingredients needed for your cake when you are ready to bake. Just message us through Facebook or our new website and let us know when you can collect, and we will have the ingredients ready for you.
A copy of the recipe and instructions will be included in your pack.
Christmas Cake Fruit Jar
Included in your 1kg Weight Ahead jar:
- raisins
- sultanas
- currants
- dates
- dried apricots
- prunes
- figs
- cranberries
- zest and juice 1 orange
- zest and juice 1 lemon
- 150ml whisky
Leave to soak for at least 24 hours – soaking for 2-3 months is recommended for a rich fruit cake
Cake Ingredients
When you are ready to bake:
- 250g pack butter, softened
- 200g light soft brown sugar
- 100g flaked almonds
- 175g plain flour
- 100g ground almond
- ½ tsp baking powder
- 2 tsp mixed spice
- 1 tsp ground cinnamon
- ¼ tsp ground cloves
- 4 large eggs
- 1 tsp vanilla extract
- Baking parchment to line cake tin
We can offer a gluten free option. Just let us know if you would prefer to have gluten free flour in your pack.
